Open the status menu
On the project page, click the status badge at the top (for example Draft ▾).

Pick the new status
Choose Sent, Won, Lost or Completed.

That's it
Marking a bid Sent or Won saves a copy of it as it stands, so you can always see exactly what you handed in.
